  • Pumpkin Bars with Cream Cheese Frosting

    Pumpkin Bars with Cream Cheese Frosting

    Use either fresh squash or pumpkin from your garden to make these bars!  Great for potlucks, events, or school fundraisers-quick, easy and lots of bars to share!  Great recipe for kids to learn how to bake.

    Ingredients for bars:Pumpkin bars

    • 2 cup flour
    • 2 tsp baking powder
    • 2 tsp cinnamon
    • 1 tsp baking soda
    • 1/4 tsp salt
    • 4 eggs
    • scant 2 cups squash or pumpkin (OR 15 oz can pumpkin)
    • 1 2/3 cup sugar
    • 1 cup oil

    Ingredients for frosting:

    • 4 oz cream cheese, softened
    • 2 c powder sugar
    • 1 tsp vanilla


    Directions:

    1. Preheat oven to 350 degrees.
    2. Mix flour, baking powder, cinnamon, baking soda, and salt together.
    3. In a separate bowl, beat eggs.  Add squash (or pumpkin), sugar and oil to eggs.  Mix well.
    4. Stir dry and wet ingredients together until thoroughly mixed.  Grease jelly roll pan (cookie sheet size) and pour batter onto pan. Bake for 25-30 min.
    5. While bars are baking, make frosting.  Mix together cream cheese, powdered sugar and vanilla until smooth.
    6. When bars are completely cooled, pour frosting and spread evenly.
    7. Cut and enjoy!!
