    Alaskan Hunting Bars

     

    This recipe comes from Jonnie, a Garden Center employee.  She said these were developed for a hunting trip to Alaska where weight, nutrition and caloric content were prime considerations.

    Ingredients:

    Toss in large bowl:

    • 1 cup raw wheat germ
    • 1 cup raw oat bran (not bran flakes),
    • 1 1/2 cups rolled oatmeal (may use instant )
    • 1 cup chopped nuts: peanuts, walnuts, almonds, pecans or your favorite or a mix
    • 1 cup graham cracker crumbs
    • 1 cup crushed Total cereal (may use Wheaties or Bran Flakes)
    • 1 1/2 cups Rice Krispie cereal
    • 1 cup mini marshmallows (optional)
    • 1 cup mini chocolate chips (optional)


    Melt in saucepan:

    • 3/4 cup peanut butter
    • 3/4 cup butter
    • 16 oz. marshmallows
    • 3 Tablespoons honey
    • 4 Tablespoons peanut or safflower oil


    Directions:

    1. Remove from heat, stir in 2 heaping tablespoons protein powder (may use powdered egg white). Pour over cereal mixture. Toss quickly.
    2. Turn out into buttered sheet cake pan and pat out evenly to about 1” thickness. Cool. Cut into 1” x 4” bars.
    3. May be dipped in melted chips (thin with a bit of paraffin) if desired.  
    4. Wrap individually. Each bar will weigh about 1 ounce.

    Notes:  Dried fruit such as blueberries, cranberries or raisins may be added or substituted for the 1 cup of mini marshmallows, but this may affect weight per bar.
