This is a popular recipe and great for a summer time treat. It's especially delicious with garden fresh fruit- strawberries, blueberries, and raspberries!!
Ingredients:
1 large package refrigerator sugar cookie dough, sliced approx. 1/4 in.
1 8-oz. package cream cheese, softened
1/3 c sugar
Fresh fruit, about 4 cups (any type berries, grapes, bananas, peaches, apricots,kiwi etc.)
1 6-oz. jar apricot or apple preserves
1/4 c lemon juice, plus more for treating fruit
Directions:
Place cookies 1/2 inch apart on pizza pan.
Bake using package directions. Let cookie crust cool.
Beat cream cheese & sugar in bowl until smooth.
Spread cream chees mixture over cookie crust.
Treat fruit with lemon juice to prevent browning.
Arrange fruit over cream cheese layer.
Heat preserves & 1/4 cup lemon juice in saucepan, mixing well.
